You seem to have a lot of information regarding the usage and storage of fish in Swedish cuisine. I think your article is well written and includes a neutral wikipedia like tone. My only critique is that you lack the citations, but you are also still early in the writing process so it is not a big deal just make sure that your sources are credible.

Also You may have enough information to work with to just focus on the preservation of fish.
