The restaurant is named after the village in the Lubéron rather than the Catalan region. [2] Roussillon’s trademark is the exquisite blend of French cuisine with the finest of British seasonal vegetables. [3]

Alexis Gauthier was the Chef Patron of Roussillon, on the 2nd of April 2010, Roussillon announced that, following twelve years of successful collaboration, Alexis Gauthier had decided to move on to devote more time to his other projects. [4]
