I specialise in nineteenth-century food history, charting the development of recipe texts and material food technology throughout the century. I focusing on recipes from figures including Isabella Beeton, Eliza Warren Francis, Alexis Soyer, Charles Elmé Francatelli, as well as recipes in manuscript collections and periodicals such as All the Year Round.
