I found this edit. Please read: WP:V, our verifiability policy. Wikipedia is based on what is verifiable and not what is "real". The source published says "Mex Mex" is used.

If you want anecdotes: I am aware of one Houston restaurant, Pico's, which uses this term. Pico's is very prominent in this city. I found that "Emma's Grill and Mex-Mex Bistro" and "Tacoland Mex-Mex" in Cy-Fair also use "Mex-Mex". There was another, restaurant, Cabo Mix-Mex Grill, which uses "Mix-Mex" (I don't know of any others).
  • This is the source I used: "Restaurants that offer authentic Mexican dishes in Houston now advertise themselves as "Mex-Mex," and those that offer a large selection boast a "Mix-Mex" menu. At least one restaurant chain has attempted to trademark "Fresh-Mex.""
