I think it's best to leave them together (Oxford and Cambridge) like the Regius Prof's of Divinity. The ones that say "Reg. Prof. of ----- (Oxford)"/"Reg. Prof. of ----- (Cambridge)" seem somewhat unfortunate, since the two Reg. Prof's are surely counterparts in the "two universities" (that existed when Henry VIII founded them). The professors are appointed by the Crown, not by the university, so really they pertain more to the Sovereign than to Oxford or Cambridge, at least in a certain technical sense (on the other hand, the university reserves the right to appoint a non-Regius Professor is it doesn't like the PM's choice, though in practice I don't know if this would ever happen - maybe it already has?! - do comment).
