My father was a violinist, and violinists always said sa-ra-ZAHT, as if he were French. (He left Spain at twelve and I believe resided in France until his death.) I never heard the Spanish pronunciation in the US until the nineties, when radio announcers began using the Spanish pronunciation. I've seen no evidence how he preferred it; I suspect he had four syllables when performing in Iberia and three when performing elsewhere, just as "Itzak Perlman" today is pronounced differently in New York and Israel.
