This article had me confused. The title and lead paragraph suggests a list of products like vegan bacon or Beyond Meat products, things that approximate meats. However, the list of foods consists mainly of "things people might serve instead of putting meat on the menu" without any effort to approximate meat, which is an entirely different topic.
