Eman or Pounded Yam
editEman is a staple food eaten in West Africa, particularly Nigeria. It is maded from yam and is known in some parts of Africa as fufu, pounded yam but commonly known in the midwestern the region as Eman. It is a favorite of the Binis of South-midwest of Nigeria.
The making of pounded yam starts with the peeling of the yam and then boiled until cooked. The boiled yam are then pounded into a seedless paste which often softened with mildly boiled water. Once a reasonable blend have been achieved the paste is then served with soups like: egusi, ogbono, edikaikom, stewed vegetable etc.
Similar staples in Sub-Saharan Africa include amala and fufu in West Africa, ugali in East Africa, and sadza in Southern Africa.

Flour or grated cassava?
editThis article describes a food made with cassava flour - but later it is talking about grated cassava. Which is it? Surely, this page is the same as Fufu - couldn't it be merged? Francis Hannaway (talk) 07:42, 14 May 2014 (UTC)
