Edibility

edit

The page was amended to note the edibility of this widespread amaranth. Its designation as a noxious weed in commercial agriculture has overshadowed its earlier benign and nutritious aspect. Obviously, most farmers currently experience pigweed as an annoyance and a major economic drain, but the plant was formerly widely cultivated for its leaves and seeds, and if properly cultivated (as other amaranths are around the world) it is potentially more nutritious than many widely consumed vegetables with a commercial market.
