Wine is an alcoholic beverage made from fermentation of grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes, or other nutrients. Although fruits other than grapes can also be fermented, the resultant wines are normally named after the fruit from which they are produced (for example, apple wine) and are known as fruit wine (or country wine). Others, such as barley wine and rice wine (e.g. sake), are made from starch-based materials and resemble beer more than wine; ginger wine is fortified with brandy. In these cases, the use of the term "wine" is a reference to the higher alcohol content, rather than the production process. The commercial use of the word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions. Wine is produced by fermenting crushed grapes using various types of yeast which consume the sugars found in the grapes and convert them into alcohol. Various varieties of grapes and strains of yeasts are used depending on the types of wine produced.
Wine stems from an extended and rich history dating back about 8,000 years and is thought to have originated in present-day Georgia or Iran. Wine is thought to have appeared in Europe about 6,500 years ago in present-day Bulgaria and Greece and was very common in ancient Greece and Rome; the Greek god Dionysos, and his Roman counterpart Liber represented wine. Roussanne is a white wine grape grown originally in the Rhône wine region in France, where it is often blended with Marsanne. It is the only other white variety, besides Marsanne, allowed in the northern Rhône appellations of Crozes-Hermitage AOC, Hermitage AOC and Saint-Joseph AOC. In the southern Rhône appellation of Châteauneuf-du-Pape AOC it is one of six white grapes allowed, where it may be blended into red wines. Roussanne is also planted in various wine-growing regions of the New World, such as California, Washington, Texas, South Africa and Australia as well as European regions such as Crete, Tuscany and Spain.
The berries are distinguished by their russet color when ripe—roux is French for the reddish-brown color russet, and is probably the root for the variety's name. The aroma of Roussanne is often reminiscent of a flowery herbal tea. In warm climates, it produces wines of richness, with flavors of honey and pear, and full body. In cooler climates it is more floral and more delicate, with higher acidity. In many regions, it is a difficult variety to grow, with vulnerability to mildew, poor resistance to drought and wind, late and/or uneven ripening, and irregular yields. (Full article...) -
Zinfandel (also known as Primitivo) is a variety of black-skinned wine grape. The variety is grown in over 10 percent of California vineyards. DNA analysis has revealed that it is genetically equivalent to the Croatian grapes Crljenak Kaštelanski and Tribidrag, as well as to the Primitivo variety traditionally grown in Apulia, Italy, where it was introduced in the 18th century, and Kratošija in Montenegro. The grape found its way to the United States in the mid-19th century, where it became known by variations of a name applied to a different grape, likely "Zierfandler" from Austria.
The grapes typically produce a robust red wine, although, in the United States, a semi-sweet rosé (blush-style) wine called White Zinfandel has six times the sales of the red wine. The grape's high sugar content can be fermented into levels of alcohol exceeding 15 percent. (Full article...) -
The Muscat family of grapes includes over 200 grape varieties belonging to the Vitis vinifera species that have been used in wine production and as raisin and table grapes around the globe for many centuries. Their colors range from white (such as Muscat Ottonel), to yellow (Moscato Giallo), to pink (Moscato Rosa del Trentino) to near black (Muscat Hamburg). Muscat grapes and wines almost always have a pronounced floral aroma. The breadth and number of varieties of Muscat suggest that it is perhaps the oldest domesticated grape variety, and there are theories that most families within the Vitis vinifera grape variety are descended from the Muscat variety.
Among the most notable members of the Muscat family are Muscat Blanc à Petits Grains, which is the primary grape variety used in the production of the Italian sparkling wine Asti (also known as Moscato d'Asti) made in the Piedmont region. It is also used in the production of many of the French fortified wines known as vin doux naturels. In Australia, this is also the main grape used in the production of Liqueur Muscat, from the Victorian wine region of Rutherglen. Young, unaged and unfortified examples of Muscat blanc tend to exhibit the characteristic Muscat "grapey" aroma as well as citrus, rose and peach notes. Gamay is a purple-colored grape variety used to make red wines, most notably grown in Beaujolais and in the Loire Valley around Tours. Its full name is Gamay Noir à Jus Blanc. It is a very old cultivar, mentioned as long ago as the 15th century. It has been often cultivated because it makes for abundant production; however, it can produce wines of distinction when planted on acidic soils, which help to soften the grape's naturally high acidity. Pinot gris, Pinot grigio (US: /ˈpiːnoʊ ˈɡriːdʒioʊ, -dʒoʊ/, UK: /ˈɡrɪdʒioʊ/) or Grauburgunder is a white wine grape variety of the species Vitis vinifera. Thought to be a mutant clone of the pinot noir variety, it normally has a pinkish-gray hue, accounting for its name, but the colors can vary from blue-gray to pinkish-brown. The word pinot could have been given to it because the grapes grow in small pinecone-shaped clusters. The wines produced from this grape also vary in color from a deep golden yellow to copper and even a light shade of pink, and it is one of the more popular grapes for skin-contact wine.
Pinot gris is grown around the globe, with the "spicy" full-bodied Alsatian and lighter-bodied, more acidic Italian styles being most widely recognized. The Alsatian style, often duplicated in New World wine regions such as Marlborough, Tasmania, South Australia, Washington, Oregon, and South Africa, tend to have moderate to low acidity, higher alcohol levels, and an almost "oily" texture that contributes to the full-bodied nature of the wine. The flavors can range from ripe tropical fruit notes of melon and mango to some botrytis-influenced flavors. In Italy, Pinot grigio grapes are often harvested early to retain the refreshing acidity and minimize some of the overt-fruitiness of the variety, creating a more neutral flavor profile. The first wine produced in South Africa was made by Jan van Riebeeck at a settlement founded by the Dutch East India Company
The early history of the South African wine industry (also known as New World wine) can be traced to the founding of a supply station at the Cape of Good Hope by the Dutch East India Company. Jan van Riebeeck was given the task of managing the station and planting vineyards to produce wine and grapes in the Wijnberg (Wine mountain Area); that could be used to ward off scurvy for sailors continuing on their voyages along the spice route. In 1685, another Cape Governor, Simon van der Stel, purchased a large 750-hectare (1,900-acre) estate, founding what later became the world-renowned Constantia wine estate. In the 19th century, South Africa fell under British rule which proved lucrative for the wine industry as South African wine flowed into the British market. This prosperity lasted until the 1860s when the Cobden–Chevalier Treaty signed by the Palmerston government and France reduced the preferential tariffs that benefited South African wine in favor of French wine exports.
Following the devastation from the phylloxera epidemic in the late 19th century, many vineyards were replanted with high yielding grape varieties such as Cinsaut. By the early 1900s there was a large glut of wine, creating a wine lake effect which led some producers to pour their unsaleable wine into local rivers and streams. The depressed prices caused by this out-of-balance supply and demand dynamic prompted the South African government to fund the formation of the Koöperatieve Wijnbouwers Vereniging van Zuid-Afrika Bpkt (KWV) in 1918. Initially started as a co-operative, the KWV soon grew in power and prominence, setting policies and prices for the entire South African wine industry. Riesling (/ˈriːslɪŋ, ˈriːzlɪŋ/ REE-sling, REEZ-ling, German: [ˈʁiːslɪŋ] ⓘ) is a white grape variety that originated in the Rhine region. Riesling is an aromatic grape variety displaying flowery, almost perfumed, aromas as well as high acidity. It is used to make dry, semi-sweet, sweet, and sparkling white wines. Riesling wines are usually varietally pure and are seldom oaked. , Riesling was estimated to be the world's 20th most grown variety at 48,700 hectares (120,000 acres) (with an increasing trend), but in terms of importance for quality wines, it is usually included in the "top three" white wine varieties together with Chardonnay and Sauvignon blanc. Riesling is a variety that is highly "terroir-expressive", meaning that the character of Riesling wines is greatly influenced by the wine's place of origin.
In cool climates (such as many German wine regions), Riesling wines tend to exhibit apple and tree fruit notes with noticeable levels of acidity that are sometimes balanced with residual sugar. A late-ripening variety that can develop more citrus and peach notes is grown in warmer climates (such as Alsace and parts of Austria). In Australia, Riesling is often noted for a characteristic lime note that tends to emerge in examples from the Clare Valley and Eden Valley in South Australia. Riesling's naturally high acidity and pronounced fruit flavors give wines made from the grape exceptional aging potential, with well-made examples from favorable vintages often developing smokey, honey notes, and aged German Rieslings, in particular, taking on a "petrol" character. Pinotage /ˈpɪnətɑːʒ/ PIN-ə-tahzh is a red wine grape that is South Africa's signature variety. It was cultivated there in 1925 as a cross between Pinot noir and Cinsaut (Cinsaut was known as "Hermitage" in South Africa at that time, hence the name). It typically produces deep red varietal wines with smoky, bramble and earthy flavours, sometimes with notes of bananas and tropical fruit, but has been criticised for sometimes smelling of acetone. Wine Country is the region of California, in the northern San Francisco Bay Area, known worldwide as a premier wine-growing region. The region is famed for its wineries, its cuisine, Michelin star restaurants, boutique hotels, luxury resorts, historic architecture, and culture. Viticulture and wine-making have been practiced in the region since the Spanish missionaries from Mission San Francisco Solano established the first vineyards in 1812.
There are over 1700 wineries in the North Bay, (according to Alcoholic Beverage Control of California), mostly located in the area's valleys, including Napa Valley in Napa County, and the Sonoma Valley, Alexander Valley, Dry Creek Valley, Bennett Valley, and Russian River Valley in Sonoma County. Wine grapes are also grown at higher elevations, such as Atlas Peak and Mount Veeder AVAs. Cities and towns associated with the Wine Country include Santa Rosa, Healdsburg, Sonoma, Kenwood, Petaluma, Sebastopol, Guerneville, Windsor, Geyserville, and Cloverdale in Sonoma County; Napa, Yountville, Rutherford, St. Helena and Calistoga in Napa County; and Hopland and Ukiah in Mendocino County. The influence of wine in ancient Greece helped ancient Greece trade with neighboring countries and regions. Many mannerisms and cultural aspects were associated with wine. It led to great change in Ancient Greece as well.
The ancient Greeks pioneered new methods of viticulture and wine production that they shared with early winemaking communities in what are now France, Italy, Austria and Russia, as well as others, through trade and colonization. Madeira wine
Madeira is a fortified wine made on the Portuguese Madeira Islands, off the coast of Africa. Madeira is produced in a variety of styles ranging from dry wines which can be consumed on their own, as an apéritif, to sweet wines usually consumed with dessert. Cheaper cooking versions are often flavoured with salt and pepper for use in cooking, but these are not fit for consumption as a beverage.
The islands of Madeira have a long winemaking history, dating back to the Age of Exploration (approximately from the end of the 15th century) when Madeira was a standard port of call for ships heading to the New World or East Indies. To prevent the wine from spoiling, neutral grape spirits were added. On the long sea voyages, the wines would be exposed to excessive heat and movement which transformed the flavour of the wine. Burgundy wine (French: Bourgogne or vin de Bourgogne) is made in the Burgundy region of eastern France, in the valleys and slopes west of the Saône, a tributary of the Rhône. The most famous wines produced here, and those commonly referred to as "Burgundies", are dry red wines made from pinot noir grapes and white wines made from chardonnay grapes.
Red and white wines are also made from other grape varieties, such as gamay and aligoté, respectively. Small amounts of rosé and sparkling wines are also produced in the region. Chardonnay-dominated Chablis and gamay-dominated Beaujolais are recognised as part of the Burgundy wine region, but wines from those subregions are usually referred to by their own names rather than as "Burgundy wines". A cellarette or cellaret is a small furniture cabinet, available in various sizes, shapes, and designs which is used to store bottles of alcoholic beverages such as wine or whiskey. They usually come with some type of security such as a lock to protect the contents. Such wooden containers for alcoholic beverages appeared in Europe as early as the fifteenth century. They first appeared in America in the early eighteenth century and were popular through the nineteenth century. They were usually made of a decorative wood and sometimes had special designs so as to conceal them from the casual observer. They were found in pubs, taverns, and homes of the wealthy. Christian views on alcohol are varied. Throughout the first 1,800 years of Church history, Christians generally consumed alcoholic beverages as a common part of everyday life and used "the fruit of the vine" in their central rite—the Eucharist or Lord's Supper. They held that both the Bible and Christian tradition taught that alcohol is a gift from God that makes life more joyous, but that over-indulgence leading to drunkenness is sinful. However, the alcoholic content of ancient alcoholic beverages was significantly lower than that of modern alcoholic beverages. The low alcoholic content was due to the limitations of fermentation and the nonexistence of distillation methods in the ancient world. Rabbinic teachers wrote acceptance criteria on consumability of ancient alcoholic beverages after significant dilution with water, and prohibited undiluted wine.
In the mid-19th century, some Protestant Christians moved from a position of allowing moderate use of alcohol (sometimes called "'moderationism") to either deciding that not imbibing was wisest in the present circumstances ("abstentionism") or prohibiting all ordinary consumption of alcohol because it was believed to be a sin ("prohibitionism"). Many Protestant churches, particularly Methodists, advocated abstentionism or prohibitionism and were early leaders in the temperance movement of the 19th and 20th centuries. Today, all three positions exist in Christianity, but the original position of alcohol consumption being permissible remains the most common and dominant view among Christians worldwide, in addition to the adherence by the largest bodies of Christian denominations, such as Anglicanism, Lutheranism, Roman Catholicism, and Eastern Orthodoxy. The Eyrie Vineyards is an American winery in Oregon that consists of 49 acres (20 ha) in several different vineyards in the Willamette Valley. The vineyards and winery were established by owner and winemaker David Lett, who produced the first Pinot gris in the United States. Against the advice of viticultural professors at the University of California, Davis, Lett and his wife, Diana, moved to Oregon to plant Pinot noir in 1965. They founded Eyrie Vineyards in 1966, and their first vintage was 1970.
The 1975 Eyrie Vineyards Reserve Pinot Noir won tenth place among Pinot noirs in blind tasting at the Wine Olympics in 1979. Burgundy winemaker Robert Drouhin organized a re-match at Maison Joseph Drouhin in France. The 1975 Eyrie Vineyards Reserve won second place, losing to Drouhin's 1959 Chambolle-Musigny by only two tenths of a point. Drouhin later purchased land in Oregon and built Domaine Drouhin Oregon.
Over the years, David Lett (known locally as "Papa Pinot") maintained a light-handed style of Pinot noir that did not follow the trend toward greater flavor, tannin, and color extraction, believing color not to be an indicator of quality in Pinot Noir.
