This is one seriously confusing chart.
It should be redone with the process for creating each product as the common elements between raw milk and the various products. Or in other words, it should be a process chart that shows products from each process.
As it is, this charge is more like a list, a semi scrambled list redistributed over a piece of paper with arrows between elements -- arrows that aren't exactly wrong, but don't really help understanding.
