Description
Français : Le plat de la tradition au Québec, s’il en est, la tourtière à la viande se sert en petites pointes, souvent sur la table du buffet de Noël. Son origine proviendrait plutôt du cipaille britannique devenu le cipaille ou cipâte de la Gaspésie et du Bas-du-Fleuve St-Lautent. Puis, la colonisation de Charlevoix, vers la fin du régime français et au début du régime anglais, explique le chevauchement des cultures culinaires entre le cipaille britannique et la tourte française. Le nom "Tourtière" fait référence à son plat de cuisson, comme un tajine, et au fait qu'il s'agit d'un mélange de viande entre deux abaisses et cuit dans un plat circulaire.
