A round, flattened cake speckled with shades of brown

Camas is an important food source for many Columbia Plateau cultures. In mid to late summer camas bulbs are dug up in large quantities. To make camas “bread,” the bulbs are steamed, mashed together, formed into cakes, and dried in the sun to preserve the food. The cakes are eaten as bread, boiled into mush, or cooked with meat.
